Lasagna Soup

Here's a great recipe for lasagna soup.

Another favorite soup recipe. The cheesy goodness in the middle is awesome. Although it's not as good to reheat the next day as other soups are. But still awesome.

Lasagna Soup (Adapted From: A Farm Girl Dabbles, Originally From: 300 Sensational Soups)

  • 2 tsp. olive oil
  • 1 lb. Italian sausage
  • 1 c. chopped onions
  • 2 garlic cloves, minced
  • 1 tsp. dried oregano
  • 1 T. tomato paste
  • 1 14-oz. can fire roasted diced tomatoes
  • 1 bay leaves
  • 4 c. chicken stock
  • 1 cup mafalda or fusilli pasta
  • 2 T. finely chopped fresh basil leaves
  • salt and freshly ground black pepper, to taste

For Cheese:

  • 6 oz. blended cottage cheese (use immersion blender to blend until smooth)
  • 1/3 c. grated Parmesan cheese
  • 1/4 tsp. salt
  • pinch of freshly ground pepper

 

  • 2 c. shredded mozzarella cheese

That supposed sculpture was an eyesore and I for one am glad to see it gone.
